Buckwheat soy sauce

We made Buckwheat Soy Sauce.

In the supermarket, there are two types of soy sauce that made from Japan and China.

These taste are slightly different and Japanese one is expensive little bit.

We made soy sauce which is similar to Japanese one using Chinese one with buckwheat is covered Koji mold.


At first, we made buckwheat Koji and then pickled into Chinese soy sauce.
After a week, the soy sauce was added sweet and umami flavors.
